Again, another of grandpa's favorite treats, and again, possibly mine too. And before you go 'egads! zuchinni?', let me reassure you that you can't taste it. All it does is keep everything moist for much longer than usual.
Stuff to put in
- 3 eggs
- 2 1/2 cup flour
- 2 cup finely shredded zuchinni
- 1 3/4 cup sugar
- 1/2 cup butter
- 1/2 cup oil
- 1/2 cup milk
- 1/3 cup chocolate chips
- 4 tbsp cocoa
- 1/2 tbsp vinegar
- 1 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
How to put it all together
- Cream sugar, oil and butter together in a large bowl.
- Add in eggs, milk, vinegar, and vanilla.
- Mix thouroughly.
- Add in flour, cocoa, baking powder, baking soda, and cinnamon.
- Mix thouroughly again.
- Finally, add in zuchinni, and chocolate chips.
- Mix thouroughly once more.
- Pour into 9x13 pan.
- Bake at 350F for 50 minutes.
